Easy Delicious Banana Pancakes

Want to make some really delicious pancakes the whole family will love? These are so easy to make too! Here goes:

One box of Aldi's Aunt Maple's Buttermilk Pancake Mix
One banana

Mix together 2 cups of pancake mix, 1 cup of water, and 1 mashed banana. (Increase or decrease water if it's not the right consistency for you.)

Drop the batter in a buttered skillet. Cook on each side once, until browned and done. Turn only once.

Drizzle real maple syrup over it. Mmm, delicious!


(Alternatively, you can add bits of chopped apple, blueberries, raspberries, etc as well, if bananas are not your favorite fruit.)

Baking with Pumpkin

I made some brownies with canned pumpkin. You have to try it, it is really good! Just take one box of brownie mix, add a can of pumpkin (I go to Aldi's-it's only 89 cents) and just mix and bake! That's it. The kids can lick the bowl, with no fear of salmonella from raw eggs. My grandchildren LOVED the brownies. You must try it. Only the box mix of brownies, and the can of pumpkin. That's it. No water, no eggs, no oil. Be sure to grease the pan though before you bake. I forgot to take a picture of them because they disappeared too quickly! Next time! The brownie mix is 1.25 and the canned pumpkin 89 cents. Delicious dessert!

Miller's Bulk Food and Bakery Mennonite Store

Recently, I happened upon a Mennonite store in a new location on Rt 104. Their vegetables and fruits were very reasonable and they had a lot of bulk food items and prepared foods too. The cheese curd was very good!

Make Your Own Delicious Flavored Coffee at Home!

Why spend all that money at coffee shops when you can make it at home? Did you know that you can add the sugar right in the coffee filter basket? Who knew?? Why do we add it last when it can go right in the coffee filter basket and be mixed in automatically? It will be hot and ready to drink in the pot!!

Check out this recipe from McCormick's for Cinnamon Vanilla Coffee.

I have done it with other things too, using allspice, cloves, apple pie spice, pumpkin pie spice, and for the sweetener, adding maple syrup or honey to the filter basket instead of brown sugar. Why not? Just use your imagination and experiment until you achieve the right taste.

Today I used allspice and maple syrup, just put it in the basket with the coffee. I used probably about 1/2 tsp. of allspice and maybe 1/4 cup of maple syrup. It makes the whole pot all flavored and ready to drink. It tastes mild and sweet. It came out great. I never measure, just experiment with different combinations.

Don't bother with expensive coffees and/or creamers. Just try this!

I think this would work great with tea too!

Roasted Broccoli with Garlic and Olive Oil

In the past, I always steamed broccoli. It was so-so. But then a friend told me about the way she cooked it and now I am HOOKED! It is so delicious!! You MUST try this!

First, I buy a 12 oz. bag of steamable broccoli florets in the bag for 99 cents from Aldi's. I found that is the cheapest place to get them. And, if you're worried about calories, even if you eat the whole bag, it is only 100 calories! (Of course the olive oil will add to that, but still..) 

 So, if you want a healthy, delicious meal, try this!!

Take a baking pan, add the frozen broccoli florets to the pan, drizzle some extra virgin olive oil (also from Aldi's for $2.99 for 17 oz bottle) over it all, sprinkle salt and pepper over it, and now here is where I cheat because if I am in a hurry, this only takes a minute to prepare! I buy Badia roasted garlic granules, omg they are SO delicious and I use them in everything. You will love them too!

I put them in and about halfway through, I turn them over so it all gets roasted evenly.

 This is all done and ready to enjoy!

Mystery Shopping, Is it Legitimate?

I have done some mystery shopping and yes, it is legit. The bonuses are that you can work on your own, fitting it into your own time, and you can make money. The drawbacks are that it pays really slow. Some companies pay within 2 weeks, but they are few and far between. Most times, you have to wait between 3 to 6 weeks or sometimes even more for the payment. Most use paypal, so you must have a paypal account.

 There is one that mails checks and they are Maritz Mystery Shopping. They send a check out once a month (through the mail!), and you actually deal live with people, one on one on the phone. They are one of my favorites. None of them pay a lot. But the work can be interesting. Sometimes you have to fill out so much paperwork afterwards, it seems pretty ridiculous. After a while you will get to know which companies are better. Maritz's paperwork is pretty easy! I'm not kidding when I say that some companies I have worked for, I have spent HOURS filling out the paperwork after!

I've opened bank accounts, test driven new cars, got free memberships at wholesale clubs, tried out mattresses, got free parking, shopped for cell phones, gone to amusement parks, museums, zoos, the list goes on and on. Just beware, the paperwork on some of these is ridiculous!

So, where do you start? Good question! First place I would start is by going to Volition.com. They list tons of companies where you can apply to work for them!

Another good one is Jobslinger. You will see listings of jobs here, and you can apply for them. It will give you an idea of what is out there.

Towards the end of the month, these companies get desperate and will pay bonuses to get you to do the shops.

How to Make Healthy Desserts Without Eggs or Oil!

Lately, I have been experimenting with something new. I am SO excited!! I love desserts but I wanted to make them lower fat or fat free. I was tired of substituting applesauce or bananas. So, I looked around my cupboard and thought...hmmmmm...

Then I spied a 15 oz. can of candied yams.

I took a brownie mix, used my hands and worked in a can of candied yams ONLY, the water was drained off. It takes a bit to work it all in together, and your hands get really messy. Good activity to do with kids! And as a bonus, they can lick the bowl without fear of salmonella or anything from the raw eggs, because there are NO eggs in it!

Two ingredients, a brownie mix, and a can of drained candied yams. That's it. Spray the pan with non-stick cooking spray, dump it in, and bake. Watch it carefully. It doesn't look quite as pretty, and it may be a bit lumpy if you didn't mix it well. But it tastes DELICIOUS!! They are very moist. Don't over bake. Everyone loved them! The kids especially went crazy over them and they didn't know that they are actually eating veggies too!

I have tried it also using a can of candied sweet potatoes, and the result is the same. I've experimented with gingerbread mix, chocolate chip cookie mix, they all come out the same! DELICIOUS!!

TRY IT!! You won't be sorry!

Raspberry Ketones for Weight Loss and/or Vaginal Odor??

So, I heard all about Raspberry Ketones and how it's supposed to be good for weight loss. So, I bought a bottle and thought, why not give it a try?? The particular brand I tried is called "Puritan's Pride." These are 100 mg and you take 2 daily. It seems like a good brand with quality ingredients. They smell nice! Now I didn't notice any weight loss....

BUT I did notice another very pleasant side effect. This is a bit embarrassing so please bear with me...I sat down to pee and I noticed a pleasant sweet scent emanating from between my legs. LOL WOW.

I leaned forward a bit and sniffed down there. Omigosh! It smells like raspberries!!! LOL I continued taking the whole bottle till it was gone, and only taking ONE pill every day instead of 2 and the result? I smell very sweet down there! HAHA! I love it!

I highly recommend these Raspberry Ketones!!!

I have not ever heard of anyone else talking about this, but I would love to hear if anyone else has had similar experiences with this!

P.S. This is just an observation but I am sure it can't be just me, and others will obtain the same side effects too. I bought 5 more bottles on their special offer! lol

Museum Day 2009

Museum Day 2009 is on September 26th, 2009. You can get admission for 2 to any participating museum. Here is a link to the free admission cards from Smithsonian Magazine. Great deal! :)

Free Family Film Festival

Free Family Film Festival Beginning June 2009!

When school’s out, kids around the country can visit selected Regal theatres for the Free Family Film Festival. It’s nine weeks of movies for kids and parents. Since 1991, Regal has provided this FREE! The movies are rated G & PG and start at 10AM each Tuesday and Wednesday during the festival.

First-come, first-served seating. The Free Family Film Festival is a great way for kids to spend a weekday morning in the summer.
Tickets for our 2009 Free Family Film Festival are exclusively available at select theatres’ box office on the day of the show.

Remember! They don't start until June 30th!!

(In the meantime, take your kids to a drive in movie!)

Fit Day

Fit day is a great free program to keep track of your calories, exercise, and your goals. It's really easy to make a free account, takes only a minute, and then you enter what you have eaten for the day. It figures it all out and puts it into a pie chart for you so that you can see the breakdown by proteins, fats, carbs, and yes, even alcohol! (Who knew that was one of the major food groups? lol)

Then, you can enter your stats, like your weight, measurements, activity level, etc. There are several different categories you can enter information into and then the more you enter, the more feedback you will get on the bigger picture. It has a nutrition graph too, that shows how much of the US Recommended Daily Allowance of each vitamin or mineral you are getting from your food.

It shows you the calories eaten for the day and the calories burned. You can track that day by day and see how you are progressing. You can even keep a journal there of your thoughts, and if you want to lose weight, you can track your progress on that too. It's pretty cool entering what you ate for the day and seeing the outcome of it all! Check it out! It's fun, and you may be surprised too!

There is also a version you can upgrade to and pay for, with a free 30 day trial. So far, the free version looks great! According to their website, they have 4.2 million members.

Federal Resources for Educational Excellence,... Teaching and Learning Resources from Federal Agencies

This site has a lot of educational resource material for free and they come from a variety of federal agencies. They have a lot of useful links too. It would be great for homeschoolers, as well as children in public and private schools. Or even adults too. I wish I had this when I was young. Just take a look at this index, it is amazing! For teachers, there is a link on how to organize your teaching so students learn better. Dare to Compare invites you to test your knowledge against students nationally and around the world. Pick a grade and subject: civics, economics, geography, history, math, or science. Check it out!

Tightwad Tuesday

This week I'm doing the Tightwad Tuesday! This week's theme is frugal goals for 2009. Here's mine:

1. Use the library instead of buying books. Books that I have to buy, I will buy online instead of at bookstores. It's much cheaper.

2. Use those lunch carriers more often to take food from home to work, instead of buying food.

3. Use my breadmaker! Enough said about that lol.

4. Clean out what I don't need by giving away, selling, or throwing out. Freecycle, Craig's list, eBay, and half.com come to mind!

5. Get all my photos uploaded and organized into albums to share with family and friends. It's a cheap, easy way to share, and God forbid you have a fire at your house, the pictures will be saved!

6. Speaking of family, get working on the free geneology page at ancestry.com.

7. Buy only things I really need at garage sales and thrift stores.

8. Work on getting better organized, because without organization you waste a lot of money.

9. Make more homemade meals and use less processed foods.

10. Plant a garden!

Veggie Macaroni and Cheese Menu Plan Monday

1 head of garlic, roasted
1 teaspoon olive oil
1 pound Cavatappi pasta
1 package of veggie bacon or ham
1 ½ cups fresh white bread crumbs (5 slices, crusts removed)
½ cup grated Parmigiano Reggiano cheese
8 tablespoons butter
¼ cup minced shallots
½ cup flour
1 quart whole milk
6 ounces Gruyere cheese, grated
8 ounces extra-sharp Cheddar cheese, grated
½ teaspoon pepper
1 teaspoon salt
¼ teaspoon freshly grated nutmeg

Directions: Preheat oven to 350°. Cook pasta according to package directions.

Combine breadcrumbs, veggie bacon or ham, Parmigiano Reggiano cheese, and 2 tablespoons of melted butter. Set aside.

Preheat oven to 375°.

Sauté shallots over low heat for one minute. Add remaining 6 tablespoons of butter and continue to sauté shallots in butter until translucent.

Add flour and continue to cook for 1-2 minutes. Increase heat to medium. Stirring constantly with a whisk, add milk and roasted garlic.

Cook until sauce is thickened (coats the back of a spoon). Remove sauce from heat then add salt, pepper, nutmeg, Gruyere and Cheddar cheeses. Taste and adjust salt and pepper if necessary.

Stir in cooked pasta. Pour into baking dish. Sprinkle topping to cover entire top. Cover with foil and bake 15 minutes. Remove foil and continue baking until sauce is bubbly and topping is browned. Enjoy!
