Mexican Hot Chocolate

Warm up with some Mexican Hot Chocolate!

Ingredients

1 and 1/2 cups milk

2 cups heavy whipping cream

8 oz. semisweet chocolate chips

1 teaspoon vanilla

1 tsp. cinnamon

2/3 tsp. almond extract

Directions

Combine milk, cream, cinnamon and vanilla in a pot and bring to a boil. Have chocolate on the side in a mixing bowl. Allow the heated liquid to sit off the heat for 5 minutes, then pour over the top of the chocolate. Stir the chocolate mixture until the chocolate is completely melted and smooth.

Serve immediately with whipped cream and a light dusting of cinnamon.

Serves eight. Try it with peanut butter-chocolate chips or caramel-chocolate chips for something different!
