Easy Delicious Banana Pancakes

Want to make some really delicious pancakes the whole family will love? These are so easy to make too! Here goes:

One box of Aldi's Aunt Maple's Buttermilk Pancake Mix
Water
One banana

Mix together 2 cups of pancake mix, 1 cup of water, and 1 mashed banana. (Increase or decrease water if it's not the right consistency for you.)

Drop the batter in a buttered skillet. Cook on each side once, until browned and done. Turn only once.

Drizzle real maple syrup over it. Mmm, delicious!

Enjoy!!

(Alternatively, you can add bits of chopped apple, blueberries, raspberries, etc as well, if bananas are not your favorite fruit.)

Baking with Pumpkin

I made some brownies with canned pumpkin. You have to try it, it is really good! Just take one box of brownie mix, add a can of pumpkin (I go to Aldi's-it's only 89 cents) and just mix and bake! That's it. The kids can lick the bowl, with no fear of salmonella from raw eggs. My grandchildren LOVED the brownies. You must try it. Only the box mix of brownies, and the can of pumpkin. That's it. No water, no eggs, no oil. Be sure to grease the pan though before you bake. I forgot to take a picture of them because they disappeared too quickly! Next time! The brownie mix is 1.25 and the canned pumpkin 89 cents. Delicious dessert!

How to Make Healthy Desserts Without Eggs or Oil!

Lately, I have been experimenting with something new. I am SO excited!! I love desserts but I wanted to make them lower fat or fat free. I was tired of substituting applesauce or bananas. So, I looked around my cupboard and thought...hmmmmm...

Then I spied a 15 oz. can of candied yams.

I took a brownie mix, used my hands and worked in a can of candied yams ONLY, the water was drained off. It takes a bit to work it all in together, and your hands get really messy. Good activity to do with kids! And as a bonus, they can lick the bowl without fear of salmonella or anything from the raw eggs, because there are NO eggs in it!

Two ingredients, a brownie mix, and a can of drained candied yams. That's it. Spray the pan with non-stick cooking spray, dump it in, and bake. Watch it carefully. It doesn't look quite as pretty, and it may be a bit lumpy if you didn't mix it well. But it tastes DELICIOUS!! They are very moist. Don't over bake. Everyone loved them! The kids especially went crazy over them and they didn't know that they are actually eating veggies too!

I have tried it also using a can of candied sweet potatoes, and the result is the same. I've experimented with gingerbread mix, chocolate chip cookie mix, they all come out the same! DELICIOUS!!
